One day, just for fun, we put some rye whiskey into barrels originally used to age wine. When we mixed the 'vermouth-ed' (Vya, Madera, CA) and the 'syrah-ed' (Qupé, Santa Maria, CA) we discovered an all-natural, not disgustingly sweet whiskey for the rest of us.
Where did "Yippee Ki-Yay" come from? Is it a real expression of joy popular with cowboys in the 19th century Western United States? Is it part of the greatest one liner in movie history? Was it influenced by the phrase 'Yippie-yi-yo-ki-yay' from the 1936 hit song "I'm an Old Cow Hand from the Rio Grande" about a 20th-century cowboy who has little in common with cowpunchers of old and sung by Bing Crosby in the film "Rhythm on the Range" (also sung later by Roy Rogers and Frank Sinatra) and considered one of the Top 100 Western songs of all time? We're not sure. But we are sure we like how we feel when we say it... and recommend you use it every chance you get.
We confess...we didn't coin the term "Yippee Ki-Yay". Moreover, we didn't paint the picture on the front label. It's an historic poster (Gift of The Coe Foundation and Henry B. Balink) now at the Buffalo Bill Center of the West in Cody, Wyoming (centerofthewest.org, you really ought to visit). Furthermore, we didn't distill the whiskeys in this bottle - it's our Double Rye! However, we did come up with a combination that we think will make you say...Yippee Ki-Yay drinkers of horrible tasting cheap flavored uisge beatha! One day, just for fun, we put Double Rye! into oak barrels that had originally been used to age two different types of wine and discovered an all-natural, not disgustingly-sweet sipper for the rest of us.

This bourbon started out as an experiment with just three bourbon barrels on Trey’s friend, Chris Fischer of OCEARCH’s ship, in a curious effort to discover what would happen if bourbon was left to weather the extreme elements: temperature fluctuations, salt air and the gentle rocking of the ship. The result was a thick, dark bourbon that showcases complex flavors reminiscent of other spirits; the almost black color and caramel flavors resemble a dark rum as the sugars within the barrels caramelized; the briny, savory taste from the barrels breathing the sea air is reminiscent of Islay Scotch; and at its core, it’s a true bourbon. Due to a massive demand from consumers, Trey has now commercialized this experiment and sent hundreds of barrels around the world.

Wild Turkey has announced the latest release in its Master’s Keep series – Master’s Keep oloroso sherry cask
This is the fifth release in the series. Master’s Keep Bottled in Bond is a 17-year-old Kentucky straight bourbon whiskey.
The bottling is only the second-ever Wild Turkey bourbon to carry the bottled-in-bond label. A bourbon with that label must be the product of one single distilling season from one distillery, aged in a federally bonded warehouse and bottled at 100 proof. (Thirteen years ago, Wild Turkey released its first-ever Bottled in Bond expression, named American Spirit.)
Whistling Andy is located in Bigfork, Montana where they make their spirits using local ingredients. The distillery was name after the co-owner, Brian Anderson's, father. This bourbon was aged in new, charred American white oak barrels for at least two years. Bottled at 40% ABV.

Cody Road Bourbon Whisky- This bourbon is made from a mash of 70% corn from Le Claire, 20% wheat from Reynolds, IL and 10% unmalted barley from Davenport, IA. It is aged for two years in newly charred 30-gallon oak barrels, about half the size of traditional whiskey barrels at a lower proof than typic.
Even as it backed off of a heavy commitment to expanding its Scotch footprint, British drinks colossus Diageo began a major expansion into bourbon. Part of this was investing in giving Bulleit a distillery and other infrastructure to call its own, and the other part was in taking the aged stock it had piled up in the Stitzel-Weller warehouses in Shively (a neighborhood of Louisville, Kentucky) and bottling it in various limited edition releases. One of those was Blade And Bow 22 Year Old.
Let’s say the average consumer, shopping for an old bourbon, is on the internet doing due diligence before buying a $150 bottle. Something critical for that person to understand is that, following the lead of a few key individuals, most bourbon bloggers have a strong bias against Diageo, and Blade And Bow 22 Year Old suffered for it.
Blade And Bow is made from two stocks of very aged whiskey, coming from the Heaven Hill-owned Bernheim Distillery and the Sazerac-owned Buffalo Trace Distillery. However, Diageo can’t just up and say it’s from Bernheim and Sazerac, presumably because of the confidentiality agreements that are standard in the bourbon industry. They give the street addresses instead, because the law requires them to say where the whiskey was made, even when they can’t say who made it.
When a trendy, popular independent bottler describes its products in a similar way (say, High West or Barrell Bourbon), the bourbon blogging clique praises them to the heavens for their transparency, and rightfully so. When Diageo does it, they mock and deride them for it.
Americans have innovated the use of corn in whisky since we first set foot on this continent. Baby Blue is not white lighting nor bourbon. It has the freshness and verve of a traditional corn whisky but with a refined complexity added by brief aging in small oak barrels. It has a round nuttiness and roasty overtones with a smooth finish. Legal definitions it could be labeled as a bourbon, but it is not essentially a bourbon in character. Bourbon is largely dominated by the flavors of the wood in the barrel; the new charred oak barrels give bourbon is defining and recognizable flavors, color and aroma.
Our brief aging in oak certainly contributes some of the recognizable oak notes and characteristic of bourbon, but these flavors do not dominate the rich corn flavors we have taken so much trouble to impart to the spirit. In any case, bourbon drinkers, as well as other whisky drinkers, will find plenty here to like. Baby Blue is not only the first Texas whisky on the market since Prohibition, but so far we know the only blue corn whisky made anywhere. It pays homage to the American whisky tradition and while adding something we think is new and innovative.
Balcones Baby Blue is made from 100% roasted Hopi blue corn. The Hopi have used it as a staple for thousands of years. Their origin mythology describes how the Creator gave the first people corn of many types, and the Hopi received the blue corn. The Hopi use blue corn as a major food source, but it has spiritual significance for them as well. It is used in many ceremonies representing long life, wisdom, understanding, and the strength that comes through overcoming hardship.
While Hopi blue corn we use has an extremely interesting history, there is really only reason one we prefer it to all other corn for our whisky– taste. Its gorgeous midnight blue kernels are packed with a rich, roasty nuttiness that is truly exceptional. Unlike most of the blue corn on the market, Hopi blue corn is not just white dent corn which has been specially crossed to give it a blue tint. There is a lot of quality corn in this category, even some nice organic examples. But in a blind taste test, we could not tell the blue from the white corn. Hopi blue corn, however, has been grown with the same rich color and flavor for thousands of years and is the only corn that could impart the rich character we require for our whisky.
The Oban distillery sits in the town of the same name and overlooks the harbour and the sea at Scotland’s western coast. The Oban distillery was founded in 1793 by Hugh and John Stevenson on the site of an old brewery. The distillery dominates the town, despite being rather small and its aesthetics are rather imperial. The pair of stills has a capacity of just 670,000 litres per annum and almost all of this is matured and bottled as single malt Scotch whisky.
Ooh... Oban! A favourite malt of many, and their Distillers Edition bottlings are well loved too. This is a 2004 vintage Oban, which was bottled in 2018 after enjoying a finishing period in casks which had previously held tasty Montilla Fino.
Flavored whiskeys are not for everyone and not every bottle produced is worth noting. This is particularly true for fans of straight whiskey. There are a few exceptions, though, and Jack Daniel's Tennessee Honey is one of those shining stars.

Ballantine's 12 Years Old Gold Seal Special Reserve, is a smooth and complex whisky. Introduced in the 1950's it includes a blend of over 40 specially selected single malt and grain whiskies, it has matured for at least 12 years.
The oldest of three Mortlach single malts unveiled in mid-2018 (alongside the Mortlach 12 Year Old and Mortlach 16 Year Old), this expression matured for 20 years exclusively in sherry casks. Intensely flavoursome stuff (as we've come to expect from Mortlach).
A gentleness lent it by the soft, pure, Lowland Waters. Ripe Summer Barley. Light, Fresh and Very Smooth. Fruity and slightly flowery, with oak and caramel, and just a hint of buttered toast. Spearmint, slightly citrus, freshness. No peaty influences to dominate the fruity, freshly cut barley. Clean taste. Good example of unpeated malt; smooth and mellow with a butterscotch texture. Very interesting.
The Sherry Oak 25yr was described by Wine & Spirits Magazine as “the single malt against which all others must be judged.” It epitomizes the renowned and classic Macallan style, matured exclusively in Sherry-seasoned casks, predominantly crafted from European oak. This oak species is abundant in tannins, which helps give the dark and golden natural colors to the whisky, along with a rich flavor profile, led by spices and dried fruits.
